Dalgona Coffee

Dalgona Coffee has taken off on social media and became very popular overnight. It’s the latest trend in Korea and now the world. With most of us being in lockdown, the very first part of our daily routine is to drink coffee. It was so unreal to see such an aesthetically pleasing photo of this popular coffee drink and found out that it was just made of 3 very simple ingredients that you’d probably have in your kitchen. Do you have instant coffee? Yep – you got them in stock! How about sugar? Of course, you do have that… and finally water??? No worries, there’s the tap for that.

Dalgona Coffee is a cold latte drink with whipped, velvety and smooth coffee foam on top. A perfect match of cold milk and bittersweet coffee foam is absolutely made in heaven. The best part of it is that, you don’t need fancy equipment to make it at home. At this strange time, that many of us are being quarantined, you’d probably craving for barista made coffee. Have no fear, as this Dalgona coffee is so easy to make. No barista certificate needed. Just a few ingredients and some strong arm muscles.


Dalgona Coffee Recipe

INGREDIENTS:

2 tablespoons instant coffee

2 tablespoons white sugar

2 tablespoons hot water

milk

ice cubes

How to Make Dalgona Coffee?

INSTRUCTIONS:

1. Put instant coffee, sugar and hot water in a bowl.

2. Mix the ingredients using whisk or a hand mixer for 3-4 minutes or until thick and foamy.

3. Put ice cubes in a desired glass or cup.

4. Pour in milk (fresh milk or almond milk).

5. Spoon coffee foam on top of the milk.

6. Mix the foam and milk together before drinking.

Homemade Taho

I’ve been making homemade taho since we came to New Zealand but I haven’t had the chance to post a blog about it. Every time we missed it, my husband would gladly go buy 3 ingredients for making taho.

Taho is actually a Filipino staple we usually eat during breakfast. It’s made of 3 ingredients only; extra soft tofu or silken tofu or tofu jelly for some, sago and brown sugar (a syrup we called arnibal). The taho vendor or what we called magtataho will be seen walking in streets, carrying two large aluminum buckets that hang from each end of a wooden pole. The magtataho carries it on their shoulder and calls out “taho” in streets in the Philippines. It is enjoyed with a teaspoon, sipping it with a straw or by simply slurping and gulping it straight from a cup.

In Baguio City, magtataho is selling strawberry taho and I would be making one in Summer.

Here’s what you need to make Homemade Taho:

INGREDIENTS:

500 grams of extra soft tofu, silken tofu or tofu jelly
1 cup brown sugar
½ cup uncooked sago or tapioca pearls
4 ½ cups water

INSTRUCTIONS:

1. In a cooking pot, bring to boil 4 cups of water.

2. Once boiled, put in the sago or tapioca pearls. Cook sago for 40 minutes or until it is transparent.

3. Turn off the heat. Drain the sago and set aside.

4. In a separate bowl, boil ½ cup water. Once boil, add in 1 cup of brown sugar. Mix well and simmer until it’s caramelized. Set aside.

5. Transfer tofu in a microwaveable dish, heat it in the microwave for 1 minute.

6. Put some tofu in a glass or mug, top with cooked sago and sweet syrup.

7. It is best serve warm.

Coffee Jelly

This recipe is a modified version of Carmela Enriquez’s recipe.

Ingredients:

1 box Coffee Jelly powder
1 can condensed milk
1 can cream
1 jar nata de coco (optional)

Procedure:

1. Make the coffee jelly powder as the instructions suggested.
2. Sliced the jelly to your liking. I want it as big as nata de coco.
3. Mix in condensed milk, cream and nata de coco.
4. Chill in the fridge.
5. Serve and enjoy with family and friends.

Avocado Shake

We had ripe avocados in our fruit bowl and we had vanilla ice cream in the freezer so I thought of making avocado shake last night since the weather wasn’t too cold. My 8 year old daughter insisted to make it for us so with my permission and assistance, she made this yummy, healthy, refreshing drink for all of us. Below is the recipe for avocado shake:

Ingredients:

1 ripe avocado
1 cup condensed milk
1 cup crushed ice
1 – 3 scoops of vanilla ice cream

Procedure:

1. Simply put all the ingredients together in the blender for 2-3 minutes.
2. When completely blended, pour the shake into a glass and enjoy.
