ANZAC Cookies (Biscuits)

What are ANZAC Cookies (Biscuits)? They were originated around WWII – ANZAC which stands for Australian and New Zealand Army Corps. These cookies, having no eggs in them (to lasts longer), were sent to soldiers and/or also to eat at home and raise funds to war.

 These ANZAC cookies are crunchy and totally scrumptious! Some recipes don’t have desiccated coconuts in them, but my family loves the texture and the taste of the coconuts with oats. It’s a perfect grab and go for breakfast or snacks.   


ANZAC Cookies (Biscuits) Recipe

INGREDIENTS:

2 cups rolled oats  

1/2 cup sugar  

1 cup desiccated coconut  

1 cup self-raising flour  

150 grams butter, melted  

1 tablespoon golden syrup or honey  

2 tablespoons water (or more if the dough is dry)

How to Make ANZAC Cookies (Biscuits)?

INSTRUCTIONS:

1. Preheat oven to 160 degrees C.  

2. In a large bowl, mix all the ingredients; oats, sugar, desiccated coconut and flour.  

3. Add melted butter, syrup and mix again into a crumble. Then pour in the water and bring it all together. Add a tablespoon of water if it’s still dry.  

4. Spoon out a portion into your palm and roll it into a ball, then place onto a tray. Make 6-8 balls to fill in the tray with spaces in between them. Flatten each ball with your hand or fork.   

5. Bake them in the oven for 20-30 minutes or until the cookies start to turn golden brown.

NOTES:

  • Don’t forget to squish down your dough balls before baking, otherwise, you will end up with baked balls.
  • If the mixture is dry, add a teaspoon of water, mix again and repeat and until you reach the right consistency.
  • If you don’t have sugar on hand, you can replace it with brown sugar or raw sugar.
  • If you prefer filling to be more compact and sticky, add 1 tablespoon flour dissolved in ¼ cup milk after the liquid has been absorbed.
  • You can dip the cooked cookies (biscuits) into melted chocolate for added yumminess!

ANZAC Biscuits or Cookies

Anzac Day is on April 25 every year, on this day we remember men and women who have served and lost their lives in war. It is a special day for New Zealanders and Australians. The term Anzac is an acronym for the Australian and New Zealand Army Corps.

Traditionally, Anzac day is a commemorative day of New Zealand and Australian soldiers who suffered and loss their lives at Gallipoli. Over time, Anzac Day has grown into a special day where we remember men and women for fighting in wars.

Anzac Day Biscuits or Cookies

Both New Zealand and Australian claim to have invented the Anzac biscuits. They are old-style biscuits made from the most basic ingredients; oats, coconuts and flour. They are fairly nutritious cookie that has a long shelf life. They can be kept well for weeks and still be good to eat.

During the World War, women at home send these biscuits overseas and could still be eaten after weeks at sea. It was interesting to know that the soldiers during those times would break the Anzac biscuits into pieces to make porridge. Some soldiers enjoyed their Anzac biscuits with a cup of tea.

It’s still school holiday in this part of the Earth and the kids got bored on their gadgets. So today we came up with an idea that will keep us busy and feed us afterwards. my kids and I made this old-fashioned cookie made with 3 main ingredients; oats, coconuts and flour. My daughter K2 likes to help in the kitchen and she absolutely loves baking. When I told her that it’s Anzac Day today, she asked if we could make Anzac cookies. I immediately said “Yes!”

She quickly grabbed all the ingredients that she need after she searched for the recipe online. She decided to make the chewy Anzac Cookies from Taste. The recipe calls for brown sugar but we ran out of it so we just used white, and also instead of golden syrup, we used honey. We didn’t quite read the instructions really well and so we didn’t melt the butter, syrup and water in a saucepan. But everything went well regardless of the step we missed.

While the Anzac biscuits were in the oven, we were watching V Live Run BTS and we were so amused of the awards each member got. In short, we left the Anzac cookies in the oven for too long and it turned into a harden rock. It was so solid that I can’t eat it. The kids finished them all though as they have stronger teeth than us, adults. It was a baking failure to be honest, but I baked the next batch of cookies and this time they turned out well.

Here’s how to make Anzac biscuits or cookies:

INGREDIENTS:

1 cup rolled oats
1 cup plain flour
2/3 cup brown sugar
2/3 cup desiccated coconut
125 g butter, chopped
2 tbsp golden syrup
1/2 tsp baking soda
2 tbsp water

METHOD:

1. Preheat the oven to 160 degrees C. Line baking trays with baking paper.
2. Combine oats, flour, sugar and coconut in a large bowl.
3. Place butter, golden syrup and 2 tbsp cold water in a saucepan over medium heat.
4. Stir for 2 minutes or until the butter has melted. Mix in baking soda. Stir butter mixture into the dry ingredients.
5. Make balls. Place on trays, 5cm apart. Flatten slightly.
6. Bake the cookies for 10 to 12 minutes or until light golden.
7. Leave on tray for 5 minutes. Transfer to a wire rack to cool down completely.
8. Serve and enjoy with family and friends!

ANZAC Cookies

Ingredients:
1 cup flour
1 cup caster sugar
1 cup desiccated coconut
2 cups rolled oats
125g butter
2 tbsp golden syrup
1 tsp baking soda
3 tbsp boiling water
Procedure:
1. Heat oven to 180C (160C fan bake). Line two baking trays with nonstick baking paper. Place flour, caster sugar, coconut and oats in a bowl and stir to combine. Make a well in the centre.
2. Place butter and golden syrup in a saucepan to melt, or microwave in a bowl to melt. Dissolve baking soda in boiling water. Add melted ingredients and dissolved baking soda to dry ingredients and mix to combine.
3. Roll spoonfuls into balls and press onto prepared baking trays, allowing space for biscuits to spread while cooking.
4. Bake for 15 minutes or until firm and golden brown. Remove to a wire rack to cool.

Anzac Biscuits

To commemorate Australia and New Zealand History!

Ingredients:
1 cup rolled oats
1 cup plain flour
3/4 cup desiccated coconut
1/2 cup caster sugar
125g butter
2 tablespoons golden syrup
1/2 teaspoon bicarbonate of soda
1 tablespoon boiling water

Procedure:
1. Preheat oven to 160°C.
2. In a large bowl, combine oats, flour, sugar and coconut together.
3. In a small saucepan, melt syrup and butter together over low heat.
4. Mix soda with 1 tablespoon boiling water in a small bowl and add to melted butter and syrup. Remove from heat.
5. Pour the melted butter mixture to the dry ingredients and mix thoroughly.
6. Firmly packed tablespoons of the mixture into balls and place about 5cm apart on the trays. Using fingers or back of a fork to flatten the dough.
7. Bake for about 15 – 20 minutes, or until biscuits are golden brown.
8. Cool biscuits on tray or wire racks.
9. Biscuits will harden when cool.
