Cake Flour Substitute:

To make 1 cup cake flour:

3/4 bleached flour
2 tbsp cornflour

  1. Your formula for replacing cake flour with regular (all purpose) flour is excellent. This is the same formula I have been using and it works ALL the time. Plus I hate cake flour; I don't like the slight acidic after taste that I seem to detect in cakes made with cake flour (however subtle it is); and I don't like the \”cakey\” (almost powdery) texture. But when I use 3/4 cup all purpose flour (in my experience it does not matter if it is bleached or note) plus 2 tbsp cornstarch for every cup of cake flour, the results are wonderful! Regine
